When I create a rectangle with the rectangle tool in the Wick editor, while trying to select a different object inside the rectangle, it selects the actual rectangle, how can I create a hollow rectangle (without painting the inside with the background color)

I recommend using the outliner tool to avoid this.
The outliner tool can be found by clicking the arrow next to the inspector
It will show you all objects you have in your project. Paths, clips, buttons, image assets, audio, frames, layers… it’s all in the outliner. Click on anything there, and it will select it in the project.
